Breakfast Casseroles

Like we all know, breakfast is the most important meal of our day. You should always have a hearty breakfast which will keep you going until lunch. When we say hearty breakfast, it definitely does not mean gorging in unhealthy junk food. There are many breakfast casserole recipes which are filling, delicious as well as nutritious.

Place some French bread slices in a well greased casserole. Pour mixture of blended eggs, tofu, vanilla, milk and baking powder. Make sure the bread slices are soaked well in this mixture. Cover the dish tightly and keep in the refrigerator overnight.

The next morning remove the mixture 30 minutes prior to baking it. Now grease a saucepan with little butter. Add frozen blueberries (thawed), sugar nutmeg and lemon zest. Toss well. Top this wit the bread slices and bake them in a preheated oven for about 30 minutes.

Sauté chopped onions, mushrooms, red pepper and zucchini in the same skillet until soft. Spread this evenly over bread cubes. Pour a blended mixture of eggs, milk and tofu over the casserole. Top with crumbled bacon. Cover it tightly and refrigerate overnight.

Next morning, remove the casserole from the refrigerator 30 minutes before baking. Stir cornflakes and melted butter until soft and spread over the casserole.
