* Broccoli and cheese casserole: Now there is a way in which you can make broccoli interesting for your kids. This recipe makes broccoli tasty and kids would not cringe at the sight of broccoli in their plates.

Combine frozen broccoli (thawed), 1 can cream of mushroom soup, 1 diced onion, grated cheddar cheese, 2 eggs, salt and pepper. Mix well. Transfer this mixture into a greased casserole, cover it with foil and bake at 350 degree F for about 50 minutes. Remove foil and sprinkle crackers on top of casserole. Bake uncovered for another 10 minutes until crackers are golden brown. You can use any other variation instead of crackers like tacos, saltines, pretzels, etc. You want to make a broccoli recipe interesting so add whatever your kids love.

* This is another interesting variation to broccoli casserole recipe. This recipe makes a whole meal and is also very delicious. Cook instant rice as per directions. Sauté chopped onions until soft, cook frozen broccoli as directed in the packet. Mix all these ingredients with a can of cream of mushroom soup, butter or margarine and a jar of processed cheese sauce. Season this with salt and pepper. Place this mixture in a greased casserole and bake for 350 degree F for 30 minutes. You can use fresh chopped broccoli instead of the frozen ones and regular rice to make this dish more nutritious.

* Broccoli casserole has another interesting variation. Take a mixing bowl and combine chopped, cooked and drained broccoli, 1 cup mayonnaise, grated cheddar cheese, 1 can cream of mushroom soup and 2 lightly beaten eggs. Mix well (preferably use a metal spoon). Place the mixture in a greased casserole. Top it with crushed cracker and melted butter. Bake for 30 minutes until crackers are golden brown.
